When the strawberry cheesecake Oreos came out, Tom bought me a whole box. He literally picked a box off the shelf giving me 16 packets of cookies. He did exactly the same thing with the mint flavour and believe or not, I still have some left (of both).
Having already baked some strawberry cheesecake and mint chocolate Oreo cupcakes, I decided to think of another bake to add some Oreos to and settled on a batch of blondies.
Blondies are seemingly becoming a big thing and a lot of the recipes I’ve seen include some fresh raspberries or strawberries to add a fruity twist and a dash of colour. Having never had blondies before (baking or eating them) and given how well the dairy free Oreo brownies turned out, I decided to make a blondie version. Even though this recipe uses white chocolate, it can still be made dairy free! In fact I made two batches, one dairy free and one not and then compared them.
Now I will admit that I used dairy free butter in both batches and that is simply because I find that it makes the sponge much lighter. The only difference between the two batches (other than the main one of dairy vs non-dairy) was the dairy free version used white chocolate squares broken into smaller chunks, whereas the dairy version used white chocolate chips. Both were light and gooey, but the dairy free version had bigger chunks of melted white chocolate, making them extra gooey. Both versions though were very tasty and there really was little difference.
Like the traditional brownie recipe, blondies are equally as easy to make and the sweet smell coming from the oven as they bake is amazing. If you would like to give these a try then the recipe is below. Happy Baking!
Strawberry Cheesecake Oreo Blondies
125g dairy free butter (I use Flora Freedom)
200g white chocolate (chips or chunks)
100g golden caster sugar
½ teaspoon of vanilla essence
130g plain flour
1 packet of strawberry cheesecake Oreos (broken into quarters)
Preheat the oven to 160°C and line a brownie tray with greaseproof paper
Melt together the butter and half the white chocolate and then leave to cool slightly
Whisk together the eggs, sugar and vanilla
Add the melted butter and chocolate and whisk until combined
Sift in the flour and add the remaining chocolate and half a packet of strawberry cheesecake Oreos
Pour the mixture into your brownie tin and then place the remaining broken Oreo pieces on top and press them in slightly
Bake for 20-25 minutes until set and a light/golden colour
Leave to cool in the tin before cutting
